Healthy Living Cafe Mac and Cheese
- 1 lb penne pasta
- ½ cup onions, small dice
- 2 large garlic clove, minced
- 1 qt half and half
- ¼ cup butter
- 1/3 cup flour
- 1 qt grated sharp cheddar cheese
- Salt and pepper to taste
A rich and delicious cafe favorite!
Cook pasta in a large pot of salted water until al dente. Drain and set aside. Add one tablespoon of butter to a skillet, melt over medium low heat , add the onions and garlic. Cook gently until softened. Add the half and half and bring to a simmer. Make a roux by melting ¼ cup butter in a small pot. When bubbly, add the flour and stir and good gently until it starts to color and bubble. Remove from heat and whisk into the onion mixture to combine. Turn off heat and stir in the cheese until melted. Place pasta into a buttered casserole dish and pour sauce over, mix well. Bake in a 350°F for about 20 minutes until golden brown and set.
