Healthy Living Cafe Stuffing

  • 2 cups diced onions
  • 2 cups diced celery
  • 3 cups chicken stock
  • ½ tsp sage
  • ¾ tsp thyme
  • ¾ tsp salt
  • ¼ tsp pepper
  • 8 TB (1 stick) butter
  • 2 quarts stale white bread
  • 2 eggs
  • 4 TB minced parsley

Melt half of the butter in a large skillet over medium heat, add onions, celery, sage and thyme. Add salt and pepper and stock. Bring to a simmer and cook 5 minutes. Beat eggs with parsley in a large bowl, add bread, then pour in the vegetable-broth mixture and toss well. Transfer to a buttered pan and dot with butter. Cover and bake 30 minutes at 375°F. Uncover and bake until golden, about 30 more minutes.
