Healthy Living Cafe Super Creamy Rice Pudding
- 4 1/4 c milk
- 1/4 vanilla bean, split
- zest of 1/2 a lemon
- 3/4 c + 2 T arborio rice
- 6 egg yolks
- 10 1/2 T sugar
- 8 1/2 T butter
- 1 c heavy cream
- cinnamon
A terrifically satisfying and nutritious dessert!
Combine first 4 ingredients in a large, heavy bottomed pot. Heat over medium heat, whisking often. Cook for about 20 minutes, or until rice is al dente. If the milk starts to boil too vigorously reduce heat to medium-low. Turn off burner.
When the rice is done, whisk together yolks and sugar until smooth. Add a ladle full of the hot milk mix to the egg mixture and whisk well. Repeat 2-4 more times until the egg mixture has warmed.
Whisk the egg yolk mixture back onto the rice mixture. Add the butter and whisk until melted.
Pour into a deep baking pan and press plastic wrap to the surface to prevent a skin from forming.
Chill until cold. Whip heavy cream until soft peaks and fold into chilled rice mixture. Sprinkle with cinnamon.
