Herb Roasted Fingerling Potatoes
- 2 lbs fingerling potatoes, halved
- 2 Tbsp olive oil
- 1 tsp rosemary
- 1 tsp thyme
- ½ tsp salt
- ¼ tsp black pepper
Serves: 4
Instructions:
- Preheat oven to 425°F.
- Toss potatoes with oil, herbs, salt, and pepper.
- Roast 25 minutes until golden and crisp.
