Herb Roasted Fingerling Potatoes

  • 2 lbs fingerling potatoes, halved 
  • 2 Tbsp olive oil 
  • 1 tsp rosemary 
  • 1 tsp thyme 
  • ½ tsp salt 
  • ¼ tsp black pepper 

Serves: 4 

Instructions: 

  1. Preheat oven to 425°F. 
  2. Toss potatoes with oil, herbs, salt, and pepper. 
  3. Roast 25 minutes until golden and crisp.
