HL Bakeshop’s Gluten-Free Peanut Butter Cookies

  • 1 jar natural no-stir peanut butter
  • 2 eggs
  • 1 1/2 cups sugar
  • 1 heaping tsp baking soda

Direct from our incredible Bakeshop, these supernatural gluten-free peanut butter cookies are in fact super natural and perfect for all peanut butter lovers, even those who don’t need to eat gluten-free!

Whisk eggs and sugar in large bowl until light in color and tripled in volume.  Stir in peanut butter, mixing well.  Add the baking soda and incorporate completely.  Using a quarter cup measuring cup, scoop batter onto parchment-lined baking sheet and flatten each with a fork in a crosshatch design.  Bake at 350 F for 12-15 minutes, rotating pan halfway through cooking time.
