HL Bakeshop’s Maple-Walnut Bread
For the Bread:
1 ½ cup all purpose flour
1 tsp. baking powder
¼ tsp. salt
1 stick butter
1 cup sugar (or ¾ cup maple syrup)
2 eggs
½ cup milk (minus 2 Tbsp. if using maple syrup)
½ cup chopped walnuts
For the Drizzle:
½ cup maple syrup *A great place to experiment with infused syrup! We recommend Runamok Cardamom infused!
1 Tbsp. melted butter
Preheat your oven to 325 degrees and prepare one large or two small loaf pans. Cream the butter and sugar until pale and fluffy. Add the baking powder and salt. Add the eggs one at a time, incorporating one fully before adding the next. Add ⅓ of the flour and mix until almost completely combined. Add ½ of the milk and mix until almost completely combined. Repeat and then add the rest of the flour, then the chopped walnuts. Portion batter into pans and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Once the bread has baked fully, combine the butter and syrup and heat slightly. While the bread is still warm, loosen the sides of the pans and pour about 1 ounce of syrup down the long side of the bread, while holding the pan away from the side. The syrup should pool in the bottom of the pan. Repeat with the other side. Brush the remaining syrup over the top of the bread. Sprinkle with chopped walnuts and allow to cool.
