Home-Made Pizza Sauce

  • 1 onion, finely diced
  • 2-3 cloves garlic, chopped
  • 1/2 stick butter
  • 1 can crushed tomatoes
  • 1-2 sprigs oregano
  • 1-2 sprigs thyme
  • Salt and pepper to taste
  • 3 Tbsp sugar or  more or less to taste

In a large skillet over low heat, cook the onion and garlic in the butter until very soft and fragrant.  Add the tomatoes and herbs and simmer for 10-20 minutes to infuse all the flavors.  Add salt, pepper and sugar.  Stir and test for seasoning.  Store tomato sauce in the fridge for up to 2 weeks or process in canning jars!
