Honey Butter Roasted Carrots with Pistachios
- 1 lb carrots, peeled and cut into sticks or left whole
- 2 tbsp butter
- 2 tbsp honey
- Salt and pepper, to taste
- 1/2 cup shelled pistachios, roughly chopped
- Fresh parsley (for garnish)
- Preheat the oven to 400°F.
- In a small saucepan, melt the butter over medium heat. Once melted, stir in the honey and cook for about 1-2 minutes until the mixture is smooth and bubbly. Season with a pinch of salt and pepper.
- Place the carrots on a baking sheet in a single layer. Drizzle the honey butter glaze over the carrots, tossing them to coat evenly.
- Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, tossing halfway through.
- Remove from the oven and sprinkle the chopped pistachios over the roasted carrots. Garnish with fresh parsley if desired.
- Serve immediately as a delicious sweet-savory side dish!
