Honey Butter Roasted Carrots with Pistachios

  • 1 lb carrots, peeled and cut into sticks or left whole 
  • 2 tbsp butter 
  • 2 tbsp honey 
  • Salt and pepper, to taste 
  • 1/2 cup shelled pistachios, roughly chopped 
  • Fresh parsley (for garnish) 
  1. Preheat the oven to 400°F. 
  2. In a small saucepan, melt the butter over medium heat. Once melted, stir in the honey and cook for about 1-2 minutes until the mixture is smooth and bubbly. Season with a pinch of salt and pepper. 
  3. Place the carrots on a baking sheet in a single layer. Drizzle the honey butter glaze over the carrots, tossing them to coat evenly. 
  4. Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, tossing halfway through. 
  5. Remove from the oven and sprinkle the chopped pistachios over the roasted carrots. Garnish with fresh parsley if desired. 
  6. Serve immediately as a delicious sweet-savory side dish!
