Jerk Seasoning

¾ teaspoon ground allspice

1 ½ teaspoons cayenne

¾ teaspoon crushed chili pepper

½ teaspoon cinnamon

1 tablespoon garlic powder

1 ¾ teaspoon onion powder

¾ teaspoon ground black pepper

1 ¾ teaspoons dried thyme

½ teaspoon ground nutmeg

¾ teaspoons paprika

1 ¾ teaspoons sugar

1 ¾ teaspoons salt

Yield: ½ cup

Mix all of the ingredients together.  

Use 1-1 ½ tablespoons of seasoning with 1-1 ½ tablespoons of oil for each pound of meat

Store the remainder of the mixture for up to 1 month in an airtight container.
