Lemon Vinaigrette
- 1 tsp Dijon mustard
- 1 shallot, finely minced
- Juice of 2 lemons
- Zest of one lemon
- 1/4 cup olive oil
- 1/2 cup vegetable oil
Combine the mustard, shallot, lemon juice, and zest. Add the vegetable oil in a steady stream while whisking constantly. Gently stir in the olive oil at the end. Season with salt and pepper and set aside until you are ready to assemble the salad.
