Mango Cucumber Salad with Chili-Lime Dressing

Serves 4 

  • 2 ripe mangos, peeled and diced 
  • 1 cucumber, halved and thinly sliced 
  • ¼ red onion, thinly sliced 
  • Juice of 2 limes 
  • 1 tbsp olive oil 
  • ½ tsp chili flakes (or Tajín for extra zing) 
  • Salt to taste 
  • 2 tbsp chopped fresh cilantro or mint (optional) 

A simple, no-cook way to dress up fresh berries. Great on their own or spooned over yogurt, pancakes, or ice cream. 

Instructions 

  1. In a large bowl, combine mango, cucumber, and red onion. 
  2. In a small bowl, whisk together lime juice, olive oil, chili flakes, and salt. 
  3. Pour the dressing over the salad and toss gently. 
  4. Garnish with fresh herbs, if using. Serve chilled.
