Mango Cucumber Salad with Chili-Lime Dressing
Serves 4
- 2 ripe mangos, peeled and diced
- 1 cucumber, halved and thinly sliced
- ¼ red onion, thinly sliced
- Juice of 2 limes
- 1 tbsp olive oil
- ½ tsp chili flakes (or Tajín for extra zing)
- Salt to taste
- 2 tbsp chopped fresh cilantro or mint (optional)
A simple, no-cook way to dress up fresh berries. Great on their own or spooned over yogurt, pancakes, or ice cream.
Instructions
- In a large bowl, combine mango, cucumber, and red onion.
- In a small bowl, whisk together lime juice, olive oil, chili flakes, and salt.
- Pour the dressing over the salad and toss gently.
- Garnish with fresh herbs, if using. Serve chilled.
