Maple-Balsamic Tofu

  • 1 lb firm tofu, cut into 1” cubes
  • 2 Tbsp vegetable oil
  • 1tsp salt
  • ½ tsp ground black pepper
  • 1/3 cup tamari soy sauce
  • 1/3 cup maple syrup
  • ¼ cup balsamic vinegar
  • 2 Tbsp dijon mustard
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp ginger powder

Preheat oven to 350º F. Drain tofu well and pat dry with paper towels. In a large bowl, toss tofu together with oil, salt & pepper. Transfer to a cookie sheet and bake until almost crispy, about 15 minutes. Combine the remaining ingredients in a small bowl. Remove tofu from oven, toss with Dijon, maple mixture and return to oven for another 10-15 minutes or until the tofu is caramelized. Serve warm or cold, keeps in the refrigerator for up to 7 days.
