Mixed Berry Crumble Pie (Makes 2 Pies)
Filling:
- 1 cup sugar
- 2 frozen pie shells
- 1 teaspoon vanilla
- 1/4 cup cornstarch
- 5 cups frozen blueberries
- 5 cups frozen strawberries
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Crumble Topping:
- 1 1/4 cups all-purpose flour
- 1 1/4 cups oats
- 3/4 cup brown sugar
- 3/4 cup butter (cold, cubed)
- 1 teaspoon cinnamon
Instructions:
For the Pie Shells:
- Preheat the oven to 375°F .
- Use a fork to dock the frozen pie shells by poking holes in the bottom. This helps prevent the crust from puffing up during baking.
- Place the pie shells on a baking sheet and parbake for 8-9 minutes. Remove from the oven and set aside to cool slightly while preparing the filling.
For the Filling:
- Preheat the oven to 375°F.
- In a large saucepan, combine the sugar, cornstarch, vanilla, lemon juice, salt, and cinnamon. Add the frozen blueberries and strawberries.
- Cook the mixture over medium heat, stirring occasionally, until it thickens (about 5-7 minutes).
- Remove from heat and let the filling cool slightly.
- Divide the berry mixture evenly between the two frozen pie shells.
For the Crumble Topping:
- In a large bowl, combine the flour, oats, brown sugar, and cinnamon.
- Cut in the cold butter using a pastry cutter or your hands until the mixture forms pea-sized crumbs.
- Sprinkle the crumble topping evenly over both pies, covering the fruit filling.
To Bake:
- Place the pies on a baking sheet and bake for about 30 minutes, or until the filling is bubbly and the crumble is golden brown.
