Oatmeal Chocolate Chip Cookies

  • 1/4 cup dark brown sugar
  • 2 1/2 cups oats, divided
  • 1/3 cup sugar
  • 1 1/4 cup flour
  • 3/4 tsp baking soda
  • 2 sticks butter
  • 2 Tbsp light corn syrup
  • 1 egg
  • 2 tsp vanilla
  • 2 cups semisweet choc chips
  • 1 1/2 cups chopped walnuts

Preheat your oven to 375°F.

process the brown sugar, 1/2 cup oats, and sugar for 2-3 minutes in a food processor.  Set aside.  In a small bowl combine the flour and baking soda and set it aside with the remaining oats.  In a mixer fitted with a paddle attachment cream the butter and corn syrup.  Add the oatmeal-sugar mixture and beat until smooth. Add the eggs and vanilla and beat to combine.  Add the dry ingredients and mix until just combine.  Don’t over-mix!  Add the walnuts and chocolate chips and fold with a spatula until evenly distributed.  Using an ice cream scoop drop golf ball size balls onto a baking sheet.  Bake 10-12 min or until golden around the edges.  Transfer cookies to a cooling rack when they come out of the oven.
