Pan Roasted Acadian Redfish with Mango Relish
- 2 acadian redfish fillets, skin on
- Vegetable oil
- 1 ripe mango, diced
- 1/4 red onion, diced
- 1/2 red pepper, diced
- 1/2 avocado, diced
- Zest and juice of one lime
- Small bunch cilantro, chopped
- 2 Tbsp olive oil
- Kosher salt and fresh cracked black pepper
It is best to prepare the relish first, so it can marinate while you cook the fish. Combine all the ingredients (mango-olive oil) in a medium mixing bowl and mix well. Season to taste with salt and pepper and set aside.
For the fish: In a heavy bottomed skillet over high heat, get your pan very hot. Add the oil. Prepare the acadian redfish by lightly scoring the skin (this prevents the fish from curling in the pan). Season the fish with salt and pepper. Place the fish skin side down in the pan. Let it cook, without moving it, on the skin side until it almost cooked all the way through. Flip the fish and cook just one minute more. Remove the fish from the pan and rest for 3-5 minutes. Serve immediately with the relish on top.
