Pão de Queijo (Brazilian Cheese Balls)

  • 2 cups of tapioca flour
  • 1 cup of low fat milk
  • 1/2 cup of butter
  • Salt; as desired
  • 1 1/2 cups of grated Parmesan cheese
  • 2 eggs

Preheat oven to 400˚. In a saucepan, add milk, butter and salt and bring to a boil. Stir frequently to prevent burning. Once boiled, quickly remove pan from heat and continue stirring. 1/2 cup at a time, pour tapioca flour into pan and mix ingredients until thoroughly combined. Add cheese and eggs and continue mixing until completely smooth.  Form mixture into balls, roughly golf ball-sized, and place into a muffin tray. Bake for 20 minutes or until golden brown. Try adding one of the following combinations into dough for more flavor: red pepper flakes, bacon and chives, chopped olives or jalapenos.
