Preheat oven to 400°F. Unroll puff pastry sheet into a rectangle and spread pesto evenly over the entire surface. Sprinkle mozzarella, pine nuts, and prosciutto if using evenly over the pesto. Using the long side, roll up the pastry. Brush beaten egg along the pastry edge and press together to adhere. Cut crosswise into 1/2” rounds. Place on baking sheet and brush tops with beaten egg. Bake until golden brown, about 15 minutes.
