Protein-Packed Cheesy Dip

Ingredients: 

  • 1 cup cottage cheese 
  • 1 cup shredded cheddar cheese (or a blend of cheddar and Monterey Jack) 
  • 1 small can (4 oz) diced green chilies 
  • ½ cup milk  
  • 1 tbsp butter 
  • 1 tsp ground cumin 
  • ½ tsp garlic powder 
  • ½ tsp chili powder 
  • Salt and pepper to taste 
  • Fresh cilantro for garnish, chopped 

Instructions 

  1. In a medium saucepan, melt butter over medium heat. 
  2. Add the cottage cheese, shredded cheddar cheese, and milk to the pan, stirring constantly until the cheese melts and the mixture is smooth. 
  3. Stir in the diced green chilies, cumin, garlic powder, chili powder, and salt and pepper. 
  4. Continue to cook and stir until the dip reaches your desired consistency. Add more milk if needed to thin it out. 
  5. Once smooth and creamy, remove from heat and serve immediately. 
  6. Garnish with fresh cilantro  
  7. Serve with tortilla chips, nachos, or as a topping for tacos or burritos!
