Roast Beef

1 whole bottom round of beef

3 Tbsp. whole grain mustard

3 cloves garlic, pressed

3 Tbsp. olive oil

Salt and Pepper

Preheat your oven to 325 degrees F. Place the beef bottom round on a roasting rack set over a baking dish or sheet tray (something that will catch juice). Combine the mustard, garlic, and olive oil and mix. Using a spoon or a pastry brush, coat the entire round of beef with the mustard mixture (make sure you get the bottom!). Season all over with salt and pepper. Place in oven for 1.5-2 hours or until the beef is done to your liking—use an instant-read thermometer placed into the thickest part of the meat: 120 for rare, 130 for medium and 150 for well done. Rest the beef for at least 30 minutes before slicing. Slice against the grain in thin slices. Enjoy hot with side of your choice or chill and enjoy cold for sandwich meat.
