Roasted Cauliflower and Sharp Cheddar Gratin

  • 1 large head cauliflower, in florets
  • 2 TB olive oil
  • Salt and black pepper to taste
  • 3 TB butter
  • 3 TB flour
  • 1 ½ cups milk
  • 1 cup sharp cheddar, shredded
  • ½ cup panko breadcrumbs

Toss the cauliflower with oil, salt and pepper. Spread on a large rimmed baking sheet. Roast in a preheated 400°F oven until lightly browned and tender, about 20-30 minutes. Melt the butter in a small saucepan over medium heat until bubbly. Add the flour and cook, stirring, until mixture starts to brown. Mix in the milk, nutmeg, salt, pepper and cheese. Heat and stir until the cheese is melted and the sauce is thickened. Place cauliflower in a baking dish and top with the cheese sauce. Stir to coat the cauliflower with the sauce. Top with panko bread crumbs. Bake in a preheated 350°F oven until bubbly and golden brown, about 15-20 minutes.
