Roasted Red Pepper Dressing
- 1 cup roasted red pepper; drained
- ½ cup vegetable oil
- ¼ cup apple cider vinegar
- ¼ cup honey
- 1 tsp. garlic powder
- 1 tsp. salt
- ½ tsp. freshly ground black pepper
- 2 tsp. basil*
*Amount can be doubled if using fresh herbs*
Puree peppers in a food processor until smooth, add remaining ingredients and continue to process until a smooth consistency is achieved. By hand- peppers can be finely chopped and then scraped against cutting board with a knife. All ingredients except oil can be whisked together quickly in a large bowl. Slowly stream in oil until fully combined. Taste and adjust seasoning if necessary. Makes about 2 cups.
