Roasted Tofu with Honey and Ginger

  • 1 lb. firm tofu; cubed
  • 2 tbsp. vegetable oil
  • 2 tsp. salt
  • 1 tsp. freshly ground black pepper
  • ½ cup honey
  • 2 tbsp. fresh ginger; peeled and grated or minced
  • ¾ cup water

Preheat oven to 400 degrees. Drain tofu well and blot to remove any excess moisture. Toss with oil, salt, and pepper, and roast until golden brown and crispy. Meanwhile, combine remaining ingredients in a small bowl. When the tofu is browned, remove from oven and toss with dressing. Return to oven and bake until sauce is caramelized and bubbly.
