Roasted Tofu with Maple Ginger Glaze
- 1 lb. firm tofu; cubed
- 2 cups maple syrup
- 2 tbsp. ground ginger
- 1 tbsp. garlic powder
- 1 tbsp. cider vinegar
- ¼ cup tamari soy sauce
- 1 tbsp. salt
- 2 tsp. freshly ground black pepper
Preheat oven to 400 degrees. Drain tofu well and blot to remove any excess moisture. Toss with oil, salt, and pepper, and roast until golden brown and crispy. Meanwhile, combine remaining ingredients in a small saucepan and reduce to a thick syrupy consistency. When the tofu is browned, remove from oven and toss with dressing. Return to oven and bake until sauce is caramelized and bubbly.
