Sausage Potato and Kale Soup

1 lb fresh Italian sausage; casings removed, sausage torn into small chunks

2 Tbsp olive oil

2 ½  cups yellow onion, sliced thin

2 cloves fresh garlic, minced

½ cup whole milk

½ tsp fresh thyme, minced

2 qt chicken stock

4 ¾ cups red potatoes, small diced

1 bunch kale; washed, stems removed, and torn into bite size pieces

Salt and pepper to taste

  1. In a medium pot, heat olive oil on medium heat.  Add sausage pieces and cook until the pieces are browned and fully cooked, about 6-7 minutes.  
  2. Add onion and garlic, and cook until the onions are translucent, about 5 minutes.
  3. Add milk, thyme, chicken stock, and diced potatoes. Mix to combine, bring to a boil, asn then reduce to a simmer. Cook on low until the potatoes are cooked all the way through,  about 20-25 minutes.  Stir frequently.
  4. When potatoes are cooked add kale pieces and cook until it is wilted. Season with salt and pepper to taste.
