Savory Vegetable Fried Rice
- 1/4 cup vegetable oil
- 2 cups scallions; minced
- 1 Tbsp. fresh ginger; minced
- 1 carrot; finely chopped
- 1 3/4 cup frozen peas
- 4 Eggs; beaten
- 4 cups cooked rice; cold and separated with a fork
Sauce:
- 1/4 cup vegetable stock
- 2 Tbsp. Mirin (rice wine)
- 2 Tbsp. soy sauce
- 1 tsp. toasted sesame oil
- 2 Tbsp. oyster sauce
- 1/4 tsp. ground black pepper
Begin by preparing the sauce. Mix all sauce ingredients together and set aside. In a large pan or wok over high heat, add the oil. Add the scallion, ginger, and carrot and cook until fragrant. Add the peas and cook until heated through. Add the egg and cook 1 minute to scramble. Add the rice, allowing it to toast well before stirring. Pour the sauce over the top and cook, mixing well until everything is evenly coated and heated through.
