Secret Oatmeal Cookies
- 3 whole eggs, beaten
- 1 cup raisins
- 1 tsp. vanilla extract
- 1 cup butter, room temperature
- 1 cup brown sugar
- 1 cup white sugar
- 2 ½ cup all-purpose flour (Never bleached or bromated ideally!)
- 1 tsp. salt
- 1 tsp. cinnamon
- 2 tsp. baking soda
- 2 cup oats
- ¾ cup walnuts, chopped
Yield: About 2 dozen
DIRECTIONS
- Preheat oven to 350° F
- Combine eggs, raisins, and vanilla. Let stand for 1 hour.
- Cream the butter and sugars until light and fluffy.
- In a separate bowl, combine flour, salt, cinnamon, and baking soda.
- Gently mix in the egg mixture until combined.
- Fold the dry mix into the butter/egg mix until combined.
- Gently mix in the oats and nuts.
- Dough will be stiff. Drop heaping tablespoons of dough on ungreased cookie sheets, leaving about 2 inches between cookies.
- Bake for 10-12 minutes.
NOTE: The dough can be refrigerated for several days! The secret is soaking the raisins.
