Secret Oatmeal Cookies

  • 3 whole eggs, beaten
  • 1 cup raisins
  • 1 tsp. vanilla extract
  • 1 cup butter, room temperature
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 ½ cup all-purpose flour (Never bleached or bromated ideally!)
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 cup oats
  • ¾ cup walnuts, chopped

Yield: About 2 dozen

DIRECTIONS

  1. Preheat oven to 350° F
  2. Combine eggs, raisins, and vanilla. Let stand for 1 hour.
  3. Cream the butter and sugars until light and fluffy. 
  4. In a separate bowl, combine flour, salt, cinnamon, and baking soda.
  5. Gently mix in the egg mixture until combined.
  6. Fold the dry mix into the butter/egg mix until combined. 
  7. Gently mix in the oats and nuts.
  8. Dough will be stiff. Drop heaping tablespoons of dough on ungreased cookie sheets, leaving about 2 inches between cookies. 
  9. Bake for 10-12 minutes.

NOTE: The dough can be refrigerated for several days! The secret is soaking the raisins.
