Smooth and Creamy Cheese Sauce
- 1/2 stick butter
- 1/4 cup all purpose flour
- 4 cups whole milk
- 10 ounces shredded cheese of your choice; I like orange cheddar for the look!
- 1/2 package cream cheese
- 1/2 tsp yellow mustard
- Salt; as desired
In a soup pot on medium heat, melt butter. Once butter is melted add flour and cook a bit to toast. Once flour smells buttery and cooked add milk and whisk well, making sure nothing sticks to the bottom. Continue to whisk until mixture begins to bubble and then thickens to nappe consistency (sticks to the back of a spoon). Turn off heat and whisk in cheese, cream cheese and mustard until fully emulsified. Season with salt and enjoy!
