Spiced Applesauce Cake with Walnuts and Golden Raisins

1/2 cup butter (1 stick)

1 cup sugar

1 egg

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground allspice

1/4 tsp ground nutmeg

1/4 tsp ground cloves

2 cups flour (or spelt flour)

2 tsp baking soda

1 tsp baking powder

1/4 tsp salt

1 1/2 cups applesauce or apple butter

1 apple, peeled, cored and diced

1 cup golden raisins

1 cup chopped walnuts

 

Preheat your oven to 350°F.  Cream the butter and sugar together until fluffy. Add the egg and vanilla and beat to combine.  Combine the dry ingredients in a large bowl and mix well.  Add the applesauce and dry ingredients to the mixing bowl and blend until just combined (over mixing will make the cake dense).   Fold in the apple, raisins, and walnuts using a rubber spatula.  Turn the batter into a buttered loaf pan lined with a sheet of waxed paper or lined muffin tins.  Bake 40 minutes to 1 hr. (more time for loaf pan, less for muffins).  When a toothpick inserted into the center of the bread/muffins comes out clean they are done.  Cool about 5 min before taking out of pan.
