Spicy Peanut Coconut Curry Dip
- 2 14oz cans coconut milk, regular or lite
- 1/3 cup peanut butter
- 2 TB maple syrup
- 2 TB tamari
- 1/2 tsp red or green curry paste
- 1/4 tsp crushed red pepper flakes
Intriguing, exotic, easy, and completely addictive- use this as a dip for raw vegetables like bell peppers or carrots, or as a sauce for rice or wheat noodles, to add a spicy punch!
Place all ingredients in a blender and blend until smooth. Taste and adjust flavors by adding more maple syrup, curry paste or red pepper flakes if needed.
