Spicy Peanut Dipping Sauce

  • 1 1” piece of fresh ginger, peeled
  • 1 small garlic clove
  • ½ cup creamy peanut butter
  • 2 TB tamari
  • 1 TB fresh lime juice
  • 1 tsp packed light brown sugar
  • ¼- ½ tsp crushed red pepper flakes

This creamy, spicy and delicious sauce is great for dipping raw veggies, tossed with pasta for peanut noodles or as a sauce with chicken skewers. 

Finely chop ginger and garlic in the bowl of a food processor. Add peanut butter, tamari, lime juice, brown sugar, red pepper flakes and 1/3 cup water.  Blend, adding water a little at a time, if needed, to thin to desired consistency. Serve at room temperature as a dipping sauce or over noodles or steamed vegetables.
