Spicy Roasted Chickpea Snack
- 1 15 oz cans chickpeas, rinsed and drained
- 2 TB olive oil
- 1 TB curry powder or chili powder, or a mix of both
- 1/2 tsp sea salt
- Freshly ground black pepper

Preheat the oven to 400°F. Toss the chickpeas with the olive oil and spices of choice in a bowl. Season with salt and pepper. Spread in an single layer on a rimmed baking sheet and bake for 15-20 minutes until crisp. Shake pan occasionally during roasting time and watch carefully near the end of cooking so as not to burn.
