Summer Herb Vinaigrette Salad Dressing
- ¼ cup fresh lemon juice (about 1 large lemon)
- 1 tsp Dijon mustard
- 1 small garlic clove, finely grated
- ½ tsp honey or maple syrup
- ½ cup olive oil
- ¼ cup chopped fresh herbs (parsley, basil, dill, chives, or a mix)
- Salt and pepper to taste
Instructions:
- In a bowl or jar, whisk together lemon juice, mustard, garlic, and honey.
- Slowly whisk in olive oil until emulsified.
- Stir in chopped herbs. Season with salt and pepper to taste.
- Store in the fridge for up to 5 days. Shake before using.
