Sunny Seafood Ceviche

½ lb dry sea scallops

½ lb fresh, peeled, shrimp

¼ cup red bell pepper, finely minced

1 jalapeno pepper, finely minced (remove seeds if you don’t want it spicy!)

¼ cup red onion, finely minced

¼ cup fresh pineapple or fresh mango, finely minced

2 tsp finely chopped cilantro

Zest and juice of one lime

Juice of ½ large orange

2 Tbsp olive oil

Salt and pepper

Prepare your seafood by cutting it into small pieces – about ¼ inch cubes or slices. In a large mixing bowl combine the scallops and shrimp, bell pepper, jalapeno, red onion, pineapple or mango (or both!), and cilantro. Add the lime zest, lime juice, orange juice, and olive oil. Mix well, cover, and put in your refrigerator for 30 minutes. Remove from fridge, mix, season with salt and pepper to taste and serve – or reserve for up to 24 hours.
