Sweet Potato and Lime Soup with Fresh Cilantro

  • 2 large onions; diced
  • ¼ cup vegetable oil
  • 2 cloves fresh garlic; minced
  • 1 tbsp. fresh ginger; peeled and grated or minced
  • 2 tsp. allspice
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 2 tsp. ground coriander
  • ¼ tsp. cayenne pepper
  • 6 sweet potato; peeled and diced
  • 2 tbsp. soy sauce
  • 2 quarts vegetable stock
  • 2 tbsp. lime juice
  • 2 tbsp. maple syrup
  • 1 tbsp. salt
  • ¼ tsp. freshly ground black pepper
  • ¼ bunch cilantro; washed, dried, and finely chopped

In a large stock pot, sauté onions in vegetable oil until tender and lightly browned. Reduce heat, and add garlic, ginger, and spices. Cook until fragrant, stirring frequently. Add potatoes, soy sauce, and enough stock to cover. Bring to a rapid boil, then reduce to simmer until potatoes are tender and cooked through. Add lime juice, maple syrup, salt, and pepper. Puree well in blender. Add cilantro to soup. Taste and adjust seasoning if needed.
