Thai Ginger Peanut Dressing

  • 2 tbsp. fresh ginger; peeled and grated or minced
  • ½ cup soy sauce
  • 2 tbsp. hot chili oil
  • 1 2/3 cup peanut butter
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • ¼ cup honey

Combine all ingredients in a food processor and pulse until smooth and creamy. Water can be added to reach desired consistency, if necessary. By hand, all ingredients can be whisked rapidly together until creamy. Taste and adjust seasoning if needed.
