Thick and Creamy Mango Lassi
- 1 ripe mango
- 2 TB sugar or to taste
- 1 cup plain yogurt (lowfat, nonfat, whole or Greek)
- 4 large ice cubes
- 1 tsp pomegranate molasses, more for garnish
- ¼ cup water unless using Greek yogurt use ½ cup
- Sprinkle of ground cardamom
Delicious anytime, even for a quick breakfast! Perfect as an accompaniment or dessert with an Indian meal.
Peel mango, cut flesh away from center pit, dropping fruit and any juices into a blender. Add rest of ingredients using less water at first, adding more to achieve desired consistency. Blend until smooth. Pour into 2 chilled glasses and drizzle with pomegranate molasses in a swirl or top with a sprinkle of ground cardamom and a few fresh mint leaves.
