Tomato Basil Soup
- 6 cups tomato juice
- 2 cups diced onion
- 2 TB olive oil
- 1 cup red wine
- 4 cups fresh basil
- 2 ½ tsp dry thyme
- 2 TB sugar
- 1 TB minced fresh garlic
- 1 TB sea salt
- 1 TB dry basil

9 cups crushed, diced tomatoes
In a large soup pot, saute onion in olive oil until softened. Add garlic, all of the dry herbs, the crushed tomatoes and tomato juice. Simmer for 30 minutes. Add the basil, shredded, and puree with a hand held blender or food processor until desired consistency. Taste for seasoning and adjust as needed.
