Vanilla Butter Cream Frosting

  • 4 eggs
  • 1 cup sugar
  • 2 tsp vanilla
  • pinch salt
  • 1 lb soft butter, cut in 1 Tbsp pieces

Combine the eggs, sugar, vanilla and salt in the bowl of a standing mixture. Place the bowl over a pan of simmering water (don’t let the bowl touch the water). Whisk gently and constantly as you heat the egg mixture to 160°F (ribbon).  Place the egg mixture back onto the mixer and beat at high speed until it comes down to room temperature.  Reduce the mixer speed and add the butter 1 piece at a time.  The frosting my look broken, but keep keep going! When all the butter is incorporated increase the speed to high and beat until smooth and fluffy.  Transfer into a piping bag and refrigerate until ready to use.
