Vanilla Vegan Frosting
- 1 cup shortening (we use Spectrum Palm Oil)
- 1 cup Earth Balance margarine
- 2 lbs confectioner’s sugar
- 1 TB vanilla extract
- 3-8 TB soy milk

Cream shortening and Earth Balance using a mixer whisk attachment. Scrap bowl often and whisk thoroughly while gradually increasing speed from medium to high. Make sure there are no lumps remaining and mixture is fluffy. Add the confectioner’s sugar, and with the mixer speed set to low, add vanilla and smaller amount of soy milk. Add more soy milk, 1 tablespoon at a time, until a desired consistency is achieved. Scrape bowl and beat on high speed until frosting is fluffy.
