White Chocolate and Peppermint Cookie Bars
- 1 1/2 cups all purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup unsalted butter, melted and slightly cooled
- 1/2 cup sugar
- 1/3 cup packed brown sugar
- 1 tsp vanilla extract
- 10 oz white chocolate, chopped
- 3/4 cup coarsely crushed peppermint candies
Preheat your oven to 350°F. Whisk together the flour, baking soda, and salt in a medium bowl and set aside. Combine the melted butter, both sugars and the vanilla in a large bowl and mix until smooth. Stir in the flour and mixture until just blended. Stir in 1 cup of the chopped chocolate and 1/2 cup of the crushed peppermint candies. Prepare a 9″ x 13″ baking pan by greasing the bottom and sides with butter and lining the bottom with a piece of parchment paper. Press the dough into the pan and bake for 30 minutes. Cool and cut into rectangles and then into triangles. Melt the reserved chocolate in the microwave (for 1.5 minutes at 50% power) or in a double boiler. Drizzle the chocolate over the cookies and sprinkle them with the remaining peppermint candies.
