Yellow Coconut Lime Rice with Toasted Almonds

1 cup Basmati rice
1 cup full fat coconut milk
½ cup water
¼ tsp turmeric
¼ tsp salt
zest and juice of one lime
¼ cup slivered almonds, toasted

Place rice, coconut milk, water, and turmeric in the Instant Pot. Add salt and mix ingredients so they are combined. Seal the lid and make sure the pressure valve is closed. Hit the “rice” button and adjust the cooking time to 8 minutes. When rice is done let the pressure release naturally. Fluff the rice and mix in the lime zest and some lime juice (to taste). Turn it out into a serving bowl and sprinkle with toasted almonds. Serve hot!
