Homemade Thanksgiving Turkey on a Plate with Stuffing and Potatoes

It’s the most wonderful time of the year… turkey time!

We love Thanksgiving.  We have a passion for it.  It’s a time for friends and family, a time set aside to be grateful and appreciative, a time for friendly football rivalry and equally friendly kitchen disputes, and last but certainly not least, a time for seriously good food.  Especially roasted turkey.

Preparing these big, beautiful, luscious birds is no mean feat- it’s an investment of time, energy, and money and the better equipped you are heading in, the better your experience will be.  Just imagine it: there you are in the kitchen.  You’ve taken the extra step of brining the turkey because you’ve heard just how amazingly moist this will make the meat and you’ve transferred it to the roasting pan.  You’ve successfully manhandled the bird in surprising demonstrations of flexibility and strength and your hands are both greasy (from packing in butter pats under the turkey’s skin) and aromatic (from bunching together assorted herbs which you’ve placed inside the cavity along with whatever it is your family loves).  Since the oven is pre-heated and ready to go, all you need to do is tie up the legs and pop her in.

But wait.  Where’s the twine?  You could’ve sworn you picked some up yesterday when you stopped in for last-minute ingredients.  After some frantic searching (because this bird has to get in the oven pronto if it’s going to cook for 3, 4, or 5+ hours!) you realize it’s not there and jump into problem-solving mode.
