Creamy Spinach
- 1 large onion; small dice
- 2 tbsp. vegetable oil
- 2 cloves fresh garlic; minced
- 1 cup half and half
- 1 cup heavy cream
- 3 lb. spinach; thawed and squeezed dry
- 1 tbsp. butter
- 1 tsp. salt
- ½ tsp. freshly ground black pepper
- ¼ tsp. freshly ground nutmeg
In a medium sauté pan, sweat onions in a small amount of vegetable oil until tender and translucent. Add garlic and cook until fragrant. Add half and half, cream, butter, salt, and pepper. Stir in spinach and simmer until nicely thickened. Taste and adjust seasoning if needed.
