Greek Olive Pasta Salad with Feta Cheese
- ½ pound penne pasta; cooked to al dente, drained, and cooled
- ½ of a small red onion; small dice
- 1/3 cup kalamata olives; roughly chopped
- 2 tomatoes; medium dice
- ¼ cup red wine vinegar
- 1/3 cup olive oil
- 1 large clove fresh garlic, minced
- ¼ bunch parsley, washed, dried, and finely chopped
- 1 tsp. freshly ground black pepper
- ½ cup feta cheese; crumbled
In a large mixing bowl, combine all ingredients except for pasta and cheese. Whisk together until thoroughly combined. Toss with pasta until evenly coated, and add in feta last. Taste and adjust seasoning if needed.
