Pineapple Crisp
- 4 cups frozen pineapple, thawed
- ¼ cup sugar
- 1 cup butter, softened
- 2 cups oats
- ½ cup rice flour
- ¾ tsp ground ginger
- ¼ cup coconut flakes
- ¼ cup brown sugar
A fun twist on apple crisp!
Preheat oven to 325°F. Drain liquid from thawed pineapple, mix with the sugar and place in an even layer on the bottom of a greased 9”x13” pan. Mix all of the remaining ingredients together in a mixing bowl. Once the mixture has crumbles the size of a dime, layer it on top of the pineapple. Bake for about 30 minutes until lightly browned.
