Mediterranean Tuna Salad
- 2 6 oz cans tuna, drained
- 3 ½ TB olive oil
- 1 2/3 TB lemon juice
- ½ tsp salt
- Black pepper, to taste
- ¼ tsp chili flakes
- ½ tsp dried thyme
- 2 tsp minced garlic
- 2 TB minced parsley
- 3 TB minced red onion
- 1 small tomato, diced small
- 3 TB chopped Kalamata olives
- 3 TB chopped green olives
- 1 ½ TB capers, drained

Combine olive oil, lemon juice, salt, pepper, chili flakes, thyme, garlic and parsley, mix well. Add remaining ingredients and mix well.
