Basmati Rice Pilaf with Goji Berries and Indian Spices
- 2 tsp cumin seeds
- 1 1/2 TB olive oil
- 1 small onion, thinly sliced
- 1 tsp turmeric
- 1 medium carrot, grated
- 1 cup Basmati rice
- 1/2 tsp salt, or to taste
- 1/4 cup dried goji berries
- 1/2 cup frozen peas, thawed
Goji berries, a popular superfruit, are often used in things like trail mix and granola; here, they’re taken to a different level with a warm, spiced pilaf. Serve alongside your choice of protein for a super-nutritious meal!
Heat the oil in a medium saucepan over medium heat. Add the cumin seeds and cook, stirring, until fragrant and seeds start to color. Add the sliced onion and cook until soft. Next, add the turmeric, stir and heat for 20 seconds. Add the grated carrot and cook for one minute. Add the basmati rice, salt and 1 3/4 cups water. Bring to a boil, cover and cook for about 12 minutes until the water is absorbed. Remove from heat. Fold in the goji berries and peas. Let stand covered for 10 minutes. Fluff with a fork and serve.
