Baba Ghanouj
- 1 eggplant
- Juice of one lemon
- 3 Tbsp tahini
- 1-2 cloves garlic
- EVOO; as desired and for drizzling
- Salt and fresh cracked pepper; as desired
- *Warm pita for serving
Cut eggplant down the middle lengthwise. Place on a parchment lined baking sheet and roast for 40 minutes at 400 degrees. Remove eggplant from oven and scoop out all the insides. Place in a blender or Cuisinart with all other ingredients and puree until smooth. Serve warm drizzled with olive oil and use warm pita for dipping
