Lemon-Dill Hummus
(2) 15 oz. cans chick peas, drained
2 large cloves garlic
¼ cup tahini
2-3 Tbsp water
Juice and zest of 1 lemon
2 Tbsp fresh parsley chopped
2 Tbsp fresh dill chopped
1/2 cup olive oil
Salt and pepper
In a food processor combine the chick peas, garlic, tahini, water, lemon juice and lemon zest. Blend on high until very smooth and even. Remove the hummus from the food processor and place in a mixing bowl. By hand, mix in the parsley, dill, and ¼ cup olive oil. Season to taste with salt and pepper. Place hummus in a serving dish. Using a spoon, make a well in the center of the hummus and fill it with the remaining olive oil. Garnish with a little sprinkling of fresh herbs if you like. Serve with veggies or pita for dipping.
